Hey, hey! I hope you are staying healthy and happy during quarantine and are getting in some extra family time! Tanner is in school full time, so ever since this all started, he has been home and it’s been so great…for me at least haha. I love having extra help with Oakley during the day, but Tanner is the kind of person who needs structure in their day to feel productive, and right now there isn’t a lot he can do. He’s also on break from school right now and it doesn’t help knowing we missed out on going to Cabo, our first baby-free vacation ever. Fingers crossed we can all travel again soon.
During quarantine, I made a few new recipes because I was getting bored with the foods Oakley was eating and I wanted to make something more interesting for a change. I can’t take any credit for the recipes I’m sharing, so I’ll link the source on each meal. As a family, we eat mostly Paleo for health reasons and I just went to Pinterest and looked for kid-friendly Paleo Recipes and came across a couple meals I wanted to try and they were delicious and easy. These are all Oakley approved too, so the whole family is happy! ***NOTE: I am not posting photos of the meals because they do not photograph well, just trust they are delicious and look at the posts I linked so you can see what they’re supposed to look like 🙂

Paleo Meatballs with Homemade Alfredo Sauce
Oakley LOVES these meatballs and so does Tanner! He will request them 1-2 times a week haha. The Alfredo sauce can be used on pasta noodles which I have done for Oakley or just on the meatballs themselves. It only takes 20 min for them to bake and you can make a lot in one batch. The sauce takes 5-10 min.

Paleo Fish and Chips
These are Cod fish and chips but without “chips”. You could definitely make sweet potato fries to have on the side though! This recipe is so easy and doesn’t take long to prepare. Oakley loves fish and will eat so much in one sitting. We eat ours with Primal Kitchen Ketchup. I kid you not, it tastes JUST like regular ketchup but it doesn’t have any added crap, including sugar! I shared this one with my friends and they tried it out and also loved it!

Pulled Pork or Brisket
Every week, I will make a batch of pulled pork or brisket in the crock pot to have on hand. This type of meat is easy for Oakley to eat and he loves it. Lately I have been adding BBQ sauce, 1 cup of water and chopped onion and whatever seasonings I decide to it, but I also make a universal batch without BBQ sauce that can be made with different meals. It’s good with quesadillas, enchiladas, pulled pork sliders, or on it’s own which is how I serve it to Oakley normally.
Cottage Cheese Egg Muffins
Oakley eats scrambled eggs almost every morning, but sometimes I decide to branch out and I’ll make these muffins. I make these with the Good Brand Cottage Cheese that we get from Sprouts because there’s no added preservatives, gums or fillers and its grass-fed from cows. And for the cheese, we always shred from a block of Raw Cheddar Cheese that we also get from Sprouts. I know Whole Foods has raw cheddar as well if you don’t have a Sprouts near you. I also use Spinach instead of Kale because we like it better haha. This is the kind of recipe you can change up easily depending on what you have on hand!
